Ingredients
- For the Shrimp:
- 2 pounds raw extra-large shrimp, peeled and deveined
- 1 tablespoon garlic powder
- 1 tablespoon crushed red pepper
- 1 tablespoon cayenne pepper
- 1 tablespoon Creole seasoning (or 1 cube Maggi seasoning)
- 2 tablespoons grated ginger
- 2 tablespoons olive oil
- 1 stick butter, melted
- 1 tablespoon fresh rosemary, chopped
- 1 cup whiskey
- For the Caramelized Onions and Tomatoes:
- 1/2 red onion, thinly sliced
- 1 cup grape tomatoes, halved
- 1 tablespoon brown sugar
- 1/4 cup whiskey
- For the Sauce:
- 1 tablespoon olive oil
- 2 tablespoons tomato paste
- For the Noodles:
- 2 packs Jollof Indomie noodles
- 1 whole egg
- Water for boiling
-For Garnish:
- Fresh chives, chopped
- Crushed red pepper (optional)
Instructions
1. Prepare the Shrimp:
- In a large mixing bowl, combine the shrimp with garlic powder, crushed red pepper, cayenne pepper, Creole seasoning, and grated ginger. Mix well to coat the shrimp evenly.
- Cover and let marinate for at least 15 minutes.
2. Prepare the Caramelized Onions and Tomatoes:
- In a bowl, combine the sliced onions, halved grape tomatoes, brown sugar, and whiskey. Stir gently to coat the vegetables with the sugar and whiskey.
- Let the mixture rest for at least 10 minutes to allow the flavors to meld.
3. Cook the Soft-Boiled Eggs:
- Bring a small pot of water to a boil. Gently add the egg and cook for 6-7 minutes for soft-boiled egg.
- Transfer the egg to an ice bath immediately to stop the cooking process. Once cool, peel the egg and set them aside.
4. Cook the Noodles:
- Bring a large pot of water to a boil. Add the Jollof Indomie noodles and cook until just al dente, about 3-4 minutes.
5. Cook the Shrimp:
- Heat a large skillet over medium-high heat. Add the marinated shrimp along with all the marinade into the skillet.
- Cook the shrimp for 2-3 minutes on each side until they turn pink and slightly caramelized, with the butter, rosemary and whiskey infusing them with flavor. Remove the shrimp and set aside.
6. Caramelize the Onions and Tomatoes:
- In the same skillet, add the onion and tomato mixture. Cook on medium heat, stirring occasionally, until the onions are caramelized and the tomatoes are softened, about 8-10 minutes.
- Stir in the tomato paste and cook for 2 minutes to develop its flavor.
Add the seasoning packets from the noodles to create a rich sauce
- Let the mixture simmer on low heat for another 5 minutes until thickened.
7. Combine and Finish:
- Gradually add the cooked noodles to the sauce, stirring to coat.
- Add the shrimp back into the pan, gently mixing everything together. Allow the shrimp to warm through, about 2 minutes.
8. Serve:
- Transfer the noodles to serving bowls. Top each bowl with the whiskey-glazed shrimp and halved soft-boiled eggs.
- Garnish with freshly chopped chives and a sprinkle of crushed red pepper if desired for extra heat.
